Roasted Potatoes with Duck Fat
When I cook duck or duck breasts, these potatoes are always the accompaniment.
When I roast a whole duck or chicken in the oven, I place it on a rack inside a roasting pan with quartered new potatoes underneath. The drippings from the bird fall onto the potatoes as they roast, resulting in a luscious side dish that is hard to beat.
